Every coffee carries potential. Our role is to reveal it, not to overpower it. Roasting is where curiosity, experience and attention come together.
Built around flavour
Our roastery combines three different roasting machines: a Stronghold S9X, a Stronghold S7 Pro, and a Roest sample roaster.
Each serves a different purpose, from evaluating tiny samples to producing coffees ready to be shared. Together, they give us precision, consistency and room to experiment.
Technology helps us understand coffee more deeply.
The final judgement, however, still belongs to the people tasting it.
Hristo, our Head Roaster
Hristo is responsible for every roast profile and every coffee that carries the Umaña name.
His work begins long before production roasting. Samples are evaluated, different approaches are tested and coffees are tasted repeatedly before a final profile is chosen.
The goal is not to make coffees taste alike.
The goal is to understand what makes each one worth remembering.
Each coffee tells you something if you pay attention closely enough.
The challenge is learning how to hear it.
Taste first
Every coffee is tasted repeatedly before it is released. Different roast profiles are compared, adjusted and evaluated until we find the version that feels most complete - the one that allows the coffee to be itself.
Over the years, we have made our share of mistakes. Some were small. Some were memorable enough that we still talk about them.
Coffee has a way of revealing shortcuts, assumptions and lapses in attention. Those lessons have shaped our approach as much as our successes.
They have taught us to move more deliberately, document more carefully and trust our palates a little less than we trust repetition.
We are still learning. We hope we always will be.

We didn’t create Umaña to become the biggest roastery. We created it to build something we would be proud to work on for decades.
A business that remains curious. A business that continues to learn. A business that allows us to discover remarkable coffees, roast them thoughtfully and share them with people who care about flavour, craft and connection.
We have always believed coffee is at its best when it brings people together. Around a table. Across a counter. During a conversation. Or in a quiet moment alone before the day begins.
In a world that increasingly values speed, automation and efficiency, we want to preserve something more human.
