Why this coffee?

Sticky Honey wasn’t part of the plan.

We originally ordered a different coffee for our house espresso, but what arrived was this honey-processed lot from Finca El Rincón. Different coffee, different profile, and technically not what we had asked for.

Then we tasted it.

What we found was everything we look for in a daily coffee: comforting sweetness, a silky body, gentle fruit notes and a clean finish that never gets tiring. It felt familiar yet interesting, approachable yet full of character.

Sometimes the best coffees are discovered by design. Sometimes they find you instead.

Sticky Honey became our house coffee at Drekka because it reminded us that great coffee doesn’t always follow the plan.

About the farm

Diego Horta is a second-generation coffee producer from Santa María, Huila, where Finca El Rincón sits between 1,600 and 1,700 metres above sea level. Combining traditional farming knowledge with a modern approach to quality, Diego focuses on producing coffees that balance sweetness, clarity and consistency while caring for the long-term health of the farm.

Variety & Processing

This lot is produced from the Colombia variety, a cultivar developed to combine cup quality, resilience and productivity. Grown at high altitude in Huila, it offers a balanced profile with gentle fruit character, rounded sweetness and a smooth structure that provides an excellent foundation for expressive processing methods.

In the cup

The coffee undergoes a honey process with 30 hours of anaerobic fermentation. After fermentation, the cherries are depulped and slowly dried under carefully controlled conditions. This approach enhances sweetness and body while preserving clarity in the cup, resulting in notes of caramel, red apple and mandarin with a silky mouthfeel and a clean, nutty finish.

Every Umaña coffee is roasted in small batches in Sofia. Made by humans.
