We chose this lot because it perfectly captures what we love about modern Colombian coffee: respect for tradition combined with a fearless spirit of experimentation. Every detail, from variety selection to fermentation and drying, has been carefully considered to create something both expressive and beautifully balanced.

About the farm

Finca Las Flores is located in Acevedo, Huila, at 1,750 metres above sea level. Run by the Vergara family, the farm has become one of Colombia’s most respected micro-lot producers, known for combining traditional coffee growing with innovative processing techniques.

Today, Las Flores operates as a centre for experimentation and quality, producing distinctive coffees that have gained international recognition for their clarity, complexity and consistency.

Raised on Finca Las Flores, Jhoan Vergara represents a new generation of Colombian coffee producers. Combining practical farming experience with studies in agronomy, microbiology and fermentation, he has helped transform the family farm into a leader in experimental processing and specialty coffee innovation.

His work focuses on understanding how variety, fermentation and drying influence flavour, creating coffees that are both technically precise and deeply expressive.

Variety & Processing

Originally descended from Ethiopian coffee genetics and later cultivated in Indonesia, Java is prized for its floral aromatics, elegant acidity and refined sweetness. When grown at high altitude, it can produce cups with remarkable clarity and complexity, often showcasing delicate floral notes alongside vibrant fruit character.

At Las Flores, the variety thrives in the cool mountain climate of Huila, developing exceptional sweetness and aromatic depth.

This lot undergoes a highly controlled washed process designed to maximise flavour clarity and complexity.

After harvest, the cherries rest for 24 hours before pulping and an extended 60-hour fermentation. The coffee is then washed using a thermal shock technique, including a warm-water rinse that helps accentuate brightness and definition in the cup. Finally, the coffee is dried slowly under carefully controlled conditions to ensure stability and consistency.

The result is a coffee with remarkable transparency, structure and elegance.

In the cup

Spiced Bloom is layered and expressive. Floral aromas lead into notes of sweet spice, ripe citrus and delicate stone fruit, supported by a silky texture and vibrant acidity. As the coffee cools, new layers continue to emerge, creating a cup that feels both refined and dynamic. Elegant, complex and beautifully structured, it is a coffee that rewards slow drinking.
