Why this coffee?

Honey Drop surprised us.

When most people think of Geisha, they expect delicate florals, jasmine and tea-like elegance. This coffee takes a different path. It is vibrant, juicy and wonderfully sweet, with notes of cherry, white peach and honey layered over a silky, syrup-like texture.

We first selected this lot as the competition coffee for the Bulgarian AeroPress Championship because it offered something rare: a coffee that could reward both precision and creativity. Whether brewed for clarity or body, it consistently revealed new dimensions in the cup.

For us, Honey Drop represents what we love most about specialty coffee — exceptional quality without pretension. A coffee that is technically remarkable, yet immediately enjoyable.

About the farm

Finca Varietales is located near Gigante, Huila, at elevations between 1,750 and 1,800 metres above sea level. Spread across four hectares, the farm focuses on cultivating high-quality varieties including Geisha, Pink Bourbon and Wush Wush.

The combination of altitude, fertile soils and careful processing allows the farm to produce coffees with exceptional sweetness, complexity and clarity.

Yenifer Rojas belongs to a new generation of Colombian producers pushing quality to extraordinary levels. Her journey into specialty coffee began through cupping more than fifteen years ago, sparking a deep fascination with flavour and processing.

Today she combines traditional farming knowledge with innovative fermentation techniques, producing coffees that consistently showcase both precision and personality.

Variety & Processing

Originally originating from Ethiopia, Geisha is one of the world’s most celebrated coffee varieties. It is known for its elegance, floral aromatics and exceptional cup quality.

In this lot, however, Geisha reveals a different side of its character. The honey process and fermentation emphasise sweetness and juicy fruit expression, creating a profile that feels rich, vibrant and approachable while maintaining the variety’s trademark complexity.

This coffee undergoes a carefully controlled Honey process designed to maximise sweetness, texture and fruit complexity.

After harvest, the cherries ferment for 24 hours before depulping. The coffee then undergoes 48 hours of anaerobic fermentation, allowing flavour compounds to develop in a controlled oxygen-free environment. Finally, it is dried slowly in a parabolic dryer for approximately 15 days.

The result is a cup with remarkable sweetness, structure and clarity.

In the cup

Honey Drop opens with vibrant notes of ripe cherry and white peach, followed by layers of honey sweetness and delicate florals. The texture is silky and syrup-like, balanced by lively acidity and a long, elegant finish. Expressive yet refined, it is a coffee that feels both playful and sophisticated.
