The first time we tasted Cherry Cola, we looked at each other and immediately knew what it reminded us of - ripe cherries, dark fruit, and that unmistakable cola-like sweetness that feels both nostalgic and completely unexpected.

But what we love most is that behind the playful flavours lies incredible craftsmanship. The Chacón family have spent years refining their Black Diamond Natural process, proving that innovation and patience can create something truly memorable.

Cherry Cola is a reminder that coffee can be serious and fun at the same time.

About the farm

This coffee comes from Finca Los Angeles, owned by Oscar and Francisca Chacón in Costa Rica’s Central Valley. The Chacón family are among the pioneers of Costa Rica’s micromill movement and founded Las Lajas Micromill in 2005 with a simple goal: to take complete control of quality and explore new possibilities in coffee processing. Their dedication to experimentation has made Las Lajas one of the most respected names in specialty coffee.

Variety & Processing

The coffee is produced from San Isidro 48, a Sarchimor-derived variety known for combining resilience in the field with excellent cup quality. While originally developed for disease resistance, in the hands of skilled producers it can deliver remarkable sweetness, structure and clarity, making it an ideal match for innovative processing methods.
This lot is processed using Las Lajas’ signature Black Diamond Natural method. Carefully selected ripe cherries undergo a controlled aerobic fermentation before being dried slowly over twenty to thirty days. The extended drying allows sugars to develop gradually, creating a cup with exceptional sweetness, vibrant fruit character and remarkable clarity. The result is a coffee that feels bright, juicy and beautifully expressive.

In the cup

Cherry Cola is playful, vibrant and full of character. Juicy cherry and ripe plum lead the way, followed by a mellow cola-like sweetness and hints of dark chocolate. The acidity is bright and winey, bringing energy and freshness, while the finish remains clean, sweet and surprisingly refreshing. It’s a coffee that feels familiar and unexpected at the same time.
