About the farm

Candied Lime comes from Finca Talquesalar, a small farm in the Chalatenango region of northern El Salvador, owned by Irene del Socorro Sosa. Situated at 1,400 metres above sea level, the farm benefits from cool temperatures and a long ripening season that help develop clarity and sweetness in the cup. Alongside coffee, citrus trees grow across the property, contributing to the diverse ecosystem that surrounds this expressive Pacamara lot.

Variety & Processing

Pacamara is celebrated for its large bean size, vibrant acidity, and remarkable sweetness. For this lot, only fully ripe cherries were selected before being depulped and honey processed. The coffee was then dried slowly on raised African beds for up to 27 days, allowing the remaining fruit sugars to develop complexity while preserving the variety’s elegant structure and bright character.

In the cup

The cup opens with rich notes of cacao and toffee before revealing layers of golden raisin sweetness. A vibrant lime-like acidity runs through the coffee, bringing freshness and balance to its creamy texture. Sweet, structured and quietly complex, it is a coffee that rewards attention while remaining effortlessly approachable.
