From the moment we tasted it, this coffee stood out for its elegance. Delicate florals, soft stone-fruit sweetness and remarkable clarity create a cup that feels calm, composed and effortlessly refined.

We chose Orchard Dreams because it proves something we strongly believe: when exceptional producers apply the same care, attention and creativity to decaf coffees as they do to their most celebrated lots, the result can be every bit as memorable

About the farm

Located in Acevedo, Huila, at elevations between 1,600 and 1,750 metres above sea level, Finca Las Flores is one of Colombia’s most innovative coffee farms. The Vergara family has earned international recognition for combining traditional coffee growing with advanced fermentation and processing techniques.

The farm is known for producing coffees with exceptional clarity, sweetness and aromatic complexity.

Jhoan Vergara represents a new generation of Colombian coffee producers who combine agricultural tradition with scientific curiosity. Working alongside his family at Finca Las Flores, he has developed a reputation for creating coffees that are both technically precise and deeply expressive.

His work focuses on understanding how variety, fermentation and processing can enhance flavour while preserving balance and transparency in the cup.

Variety & Processing

Pink Bourbon is one of Colombia’s most sought-after varieties, celebrated for its floral aromatics, elegant acidity and layered sweetness. It is capable of producing exceptionally refined coffees that combine vibrancy with balance.

In Orchard Dreams, Pink Bourbon brings delicate fruit character, soft florals and a remarkable sense of clarity.

Before decaffeination, the coffee undergoes a carefully designed multi-stage fermentation process. The cherries first ferment anaerobically for approximately 36 hours, followed by a short oxidation stage and a second anaerobic fermentation after depulping. The coffee is then dried slowly under controlled conditions to preserve sweetness, structure and aromatic complexity.

After drying, the lot undergoes the Sugar Cane (EA) decaffeination process, a gentle method that removes caffeine while preserving the coffee’s flavour, sweetness and character.

In the cup

Orchard Dreams opens with notes of apricot and white grape, followed by delicate floral aromatics reminiscent of violet blossom. The body is silky and elegant, supported by a gentle sweetness and refined acidity. The finish is clean, lingering and beautifully composed, creating a cup that feels both comforting and sophisticated.
