Pink Bourbon is one of Colombia’s most sought-after varieties, celebrated for its floral aromatics, elegant acidity and layered sweetness. It is capable of producing exceptionally refined coffees that combine vibrancy with balance.
In Orchard Dreams, Pink Bourbon brings delicate fruit character, soft florals and a remarkable sense of clarity.
Before decaffeination, the coffee undergoes a carefully designed multi-stage fermentation process. The cherries first ferment anaerobically for approximately 36 hours, followed by a short oxidation stage and a second anaerobic fermentation after depulping. The coffee is then dried slowly under controlled conditions to preserve sweetness, structure and aromatic complexity.
After drying, the lot undergoes the Sugar Cane (EA) decaffeination process, a gentle method that removes caffeine while preserving the coffee’s flavour, sweetness and character.
